If you would like to control more than four variables, take a look at these two concept sketches. The smaller version has eight knobs and is more compact. The full size has room for a label that describes the function of each knob.
Let me know which version you prefer!

Sizing wise, does the 7×1 match the chord or left keys width? I think the 4×2 is nicer (adsr top row, something else lower), but consistency in sizing would be a neat feature

I agree that the 4×2 is nicer!

Maybe something like this…

I just published Control8 (the 4 by 2 version above).
It became really good with the custom knobs and miniature trimpots:

The 1-layer between the top controls and bottom led strip appears to be a hair too thin to print with a 0.4mm nozzle. (Prusaslicer, MK3s, Pet-G thin-wall detection off and on yielded same results.)

It’s not ideal but the best solution I found. Options around it:
· Remove the top of the thin wall (will expose the potentiometer)
· Move the trimpot up (the knob will not be centred)
· Rotate the trimpot (makes routing more complicated)
I can probably reduce the distance to the trimpot by 0.1-0.2mm, it will be slightly better, but I’m not sure how standardised the trimpots are (have tested with two different versions). If anyone have any proposals, let me know!
It worked ok-ish for me when I printed with PLA (0.4 nozzle):
